That is tricky. Finding a good gf and vegan bun has been a difficult for me as well until I found a local bakery in LA that makes amazing stuff. If you cannot access a good bakery then I say give Schars a try. Check them out and see what you think. Other than that, it might be making them from scratch and just freezing them. I made these as my first attempt at gluten free baking. They are awesome!!! I cut the sugar in half and next time I will substitute half applesauce and half oil. Love these muffins!! Hooray for kitchen accidents that still turn out ok! God Bless! Made these on the weekend for my 11 year old son who has food sensitivities.

Before celiac I was so into baking, and muffins were turned out by the dozens at my house I have 3 ovens. That came to an abrupt halt after my diagnosis. I tried a few recipes here and there, but they were so obviously gluten free, it was disheartening.

I have served these muffins without fear to many non-celiac friends and family and no one can tell they are gluten free—not even me and that is saying something.
